This fresh and healthy recipe is a great alternative to ice cream!

Caramelized Peaches

Ingredients
1 pound ripe peaches (about 3 medium peaches)
3/4 cup sugar

Directions
1. Bring a medium pot of water to a boil. Meanwhile, lightly score bottom of each peach with an X, using a paring knife. Add peaches to boiling water and blanch until skin is pulling away, about 1 minute. Transfer to a bowl of ice water. When cool enough to handle, peel and pit peaches. Cut into 1/2 inch pieces.
2. Combine peaches and sugar in a medium saucepan. Cook over medium heat, stirring constantly, until just caramelized and syrupy, about 20 minutes. Let cool completely.

Peach Frozen Yogurt

Ingredients
1 pound ripe peaches (about 3 medium peaches)
2 1/2 cups Fage Greek Yogurt

Directions
1. Chill a loaf pan in freezer at least 10 minutes. Meanwhile, sprinkle figs with sugar and toss to coat; let stand until juicy, about 5 minutes.
2. Bring a medium pot of water to a boil. Meanwhile, lightly score bottom of each peach with an X, using a paring knife. Add peaches to boiling water and blanch until skin is pulling away, about 1 minute. Transfer to a bowl of ice water. When cool enough to handle, peel and pit peaches. Cut into 1/2 inch pieces.
3. Puree peaches with a blender.
4. Mix together the yogurt, caramelized peaches and peach puree.
5. Pour into ice cream maker and turn on for 25-30 minutes until stiff and then transfer to the frozen pan. Cover with plastic wrap and freeze until hardened, at least two hours.
