Summer Salads

Whenever Bungalow 56 hosts an event we are always asked for the recipes of the food that was prepared. We cater our own events and love coming up with yummy menus that will appeal to children and adults alike.



We recently threw a party for a very special little girl Lola Grace and the food and decor were a hit! So you asked and we delivered... Here are the two Summer salad recipes from the party! We hope you enjoy them as much as we did!



Roasted Corn Salad

Mixed Greens

Baby Arugula

4 Ears of Corn, Roasted on the BBQ, Cooled and Cut of the Cob

Grape or Small Heirloom Tomatoes, Halved

Sliced Avocado

Crumbled Blue Cheese

Diced Green Onion


Layer all ingredients in a bowl and dress with equal parts extra virgin olive oil and balsamic vinegar and salt and pepper to taste. Enjoy!



Pesto Pasta Salad 

Homemade Pesto (see recipe below)

One Box of Penne Pasta, Cooked Al Dente and Rinsed 

Small Fresh Mozzarella Balls, Halved

Mini Heirloom Tomatoes, Halved

Roasted Pine Nuts for Garnish 


Toss all items in a bowl, salt and pepper to taste and garnish with roasted pine nuts. 


Homemade Pesto 

1 Cup Pine Nuts

Course Salt and Pepper To Taste

8 Cups Lightly Packed Basil Leaves

2 garlic cloves

2/3 Cups Extra Virgin Olive Oil


Combine all ingredients in a food processor and pulse to desired consistancy.
